Alumnae Lead the Charge for Healthy Eating

Morristown, N.J. (August 12, 2015) – At the heart of the ShopRite in Parsippany sit two CSE alumnae whose sole mission is to keep you healthy, one food group at a time.

Evelyn Minolfo, '08, '09 and Barbara Galvin, '12, '13, share a dietitian's position dedicated to helping customers deal with their individual dietary challenges, whether that involves gluten-free, diabetes or obesity. Statewide, about 20 CSE alumni work at ShopRite at similar positions.

"The CSE Dietetic Internship program helped me find my current job," said Evelyn, a resident of New Providence who is now enrolled in the online Master of Science in Nutrition program.

"I have been a registered dietitian working for ShopRite of Parsippany and West Caldwell since 2009. CSE was the perfect fit for me. I appreciate the one-on-one attention I got from my advisor and professors. They treated me as an individual and I felt very comfortable as an adult student going back to school for a second career to become a Registered Dietitian."

Her co-worker Barbara shares a similar story. "It was at CSE that I discovered that there was a dietetics career path focused on the supermarket environment," she said. "I had been thinking about pursuing a nutrition-related career that involved helping people make good food choices in a hands-on manner. Then during my first summer class, Evelyn came to speak to our class about her new job as a supermarket dietitian. It was my "Aha" moment. I could really relate to Evelyn. I loved the idea of educating people while they were in a food mindset and in a comfortable environment."

Their path to CSE is not unlike that of other adult students returning to school for a career change. Evelyn had moved from New York to New Jersey, left her job and was home raising twin boys. She found CSE's website, met with the program director and began her journey of going back to school.

Barbara, who lives in Morristown, had heard about CSE around town, saw a sign for an open house and attended. After talking to the department head, she enrolled. "I heard all about the possibilities that CSE has to offer and I left that open house excited to start a new phase of my life."

Her CSE experience has lived up to her expectations. "I had a great experience at CSE," said Barbara. "I was impressed with my first class and that opinion continued throughout my undergraduate degree and then my Dietetic Internship. I chose the Dietetic Internship at CSE without hesitation, especially after visiting other schools and recognizing the stark contrast between those schools and the supportive environment at CSE."

While Evelyn and Barbara have a parallel CSE experience, they now also share a job. As fate would have it, each dietetic intern must spend a rotation in a supermarket with a mentor; in this case Barbara was partnered with Evelyn. By the time Barbara finished her coursework for the Dietetic Internship, there was an opening at the ShopRite – right alongside Evelyn.

"Talk about the stars aligning," said Barbara. "I started my job here the week after I finished the Dietetic Internship and I've been extremely happy. Every day I have the opportunity to help people and it's a wonderful feeling."
